In terms of cooking oil, it is good question.    There are many references on the web on which oil is more nutritious.   Our own preference is to choose a kind that would not interfere any dish’s own taste.   For example when we cook eggplant, we would want to preserve the eggplant taste.  This dictates that the cooking oil can’t be those having strong smell, like sesame oil or olive oil.   In fact we just choose vegetable oil most of the times.   For fried rice, since rice needs to add taste, on the contrary, you can choose your favorite smelly oil to experiment.   Many times the smell goes away after being heated.   So it is not effective.   In fact fried rice does not taste out any cooking oil’s smell.  Instead many people like its taste from soy sauce.

I received the wok burner with electronic ignition.  It works great.  I find it pretty easy to ignite.  It’s incredibly powerful.  I added three 5/8” rubber feet to the bottom of the legs so it can safety stand on my vinyl deck.

I first tried making chicken fried rice but I had the heat too high so everything tasted burnt.  The next attempt I turned down the heat.  This time is came out pretty close to restaurant-like.  I think I’ll try a bit more heat when I make my third attempt late.  Anyways, it works great and produces a huge amount of instantaneous heat.  It is very well built as well.
