is the actual burner part detachable for aftermarket burners? say when they get old

The burner is of cast iron and can be detached from the wind guard and leg stand. For an electronic ignition stove, the electronic ignition part is usually the first part not to function. The burner would last much longer as a comparison. The stove can be lit up by a manual long nose BBQ igniter after the electronic ignition part fails.

I see two gas valves – is there an order in which to light the burner or just turn both on?

The valve on the left side controls the main burner. The valve on the right side controls the pilot flame.

The main burner is of cast iron. The pilot is of brass. Based upon our experience, brass nozzle for the main burner will experience deformation over its life much easier since the intense heat from the main burner. The brass nozzle for the pilot is OK as it is usually in low flame usage mode. Hope this helps.
