Please help me decide

Question:

I am a Chinese guy. I would like to stir fry in my grass backyard. I need a burner with adjustable heat and about waist high. I will be using fuel from 20 lb propane tank from the local hardware store. Can you recommend a top of the line model and a good value model for me.

Question:

Do you recommend a cast iron or carbon wok.  I did not pay attention to the wok my family had when I was growing up.  Thanks.

Answer:

Usually cast iron is the best in conveying the heat.  However cast iron is not as strong, so its wok construction is not optimal, typically with two ear handles where one handle is exposed to high heat.   As long as the stove is powerful enough, we would recommend carbon steel wok with one long handle which makes tossing and other handling operations seamless on top of high heat stove.  Bests.
